cilantro lime rice

ingredients

  • 1 cup jasmine rice
  • 1 1/2 cup water
  • 1/2 ts salt
  • 1 cup chopped cilantro
  • zest and juice of 1 lime
  • 1 ts vegetable oil

directions

  • In a skillet or pan, add 1 ts oil and bring to heat over a medium burner.
  • Add rice and toast for a few minutes, until 40% of the grains are lightly browned.
  • Add rice / oil to a rice cooker along with 1 1/2 cups water and 1/2 ts salt, and cook until done.
  • When rice is finished, add to a bowl and mix with cilantro, lime juice, and zest.
